Amazing melting texture and concentrated flavours: this is a go-to dish for the weekend. You just drop ingredients in a cast-iron dish in the morning, leave it all day in the oven at a low temperature and come back home to a fragrant beautiful dish of meat.

The recipe is by Julie Andrieu, but I took the freedom to change a few things: no added bacon (frankly this is rich and umami enough!). The aromatic base is made of onions, garlic, carrots, celery, and a full bottle of red wine – which will reduce considerably, as the marks on the sides of the dish will tell you…
