Another idea in my series ‘home-made Lasagna’: when I make pesto, I keep one whole pot for a dish of lasagna. I include two generous layers of it, straight onto the pasta, with vegetables laying on it.

I roast slices of aubergines in the oven, but I cook the zucchini and the onions in a saucepan in parallel.
