I keep experimenting new recipes using tea or coffee, exploring new and strong flavours…
Here is my pan-fried salmon with a coffee-mango sauce. Served with roasted baby potatoes and the inevitable pumpkin of the season. I will not change a thing next time I make this sauce: it was a clear and earthy coffee note, softened by the touch of mango and cream, pairing beautifully with the fatty salmon.
