Sachertorte, which I have rediscovered! The combination of sweet luscious apricot and bitter chocolate is amazing. I have been playing with the chocolate and orange combination for quite a while, but this one brings roundness and softness.
The cake has an extra layer of chocolate mousse, next to the apricot jam.
I am now working on another interpretation of it, served in a glass and with added crunchiness… stay tuned!
