Chef Austin Hu passed away on Wednesday. I am saddened: it really feels like losing a friend, and it makes me reflect on the incredible power of a Chef… The power of self-expression in a way that touches people, nourishing their bodies and their souls.
I really admired the work of Chef Hu and wanted to pay him a humble but so-well-deserved tribute here.
Chef Hu had travelled the world, and built enough experience to create a style of its own once back in China: a very personal and true fusion cuisine, beautifully mixing Eastern and Western ingredients, recipes, presentations.
One of my favourite dishes is pictured here: lightly fried cauliflower with chilli, mint and a chocolate gastrique sauce. I had promised to myself I would finally dare to ask him his recipe at my next visit…
