Coquillette pasta with black truffles.

Simple but refined dish.

I find that heat tends to kill the flavours of the black truffles. So, in order to maximuse the flavour power of the dish, I infuse the truffles in the butter first, and then I simply add the truffle pieces at the end onto the hot pasta, without cooking them.

Wine pairing suggestion?!…
