I love peppers.

Considered as a superfood, packed with antioxidants and minerals, I think they are also one of the most versatile vegetables.

They can be cut so that they transform into an edible plate, adding flavour to the fillings. Here I have layered slightly sautéed onions at the bottom, and I will cover them with a shrimp risotto – a complete and beautiful meal.

Try the same idea with pre-cooked pasta, with a paprika sauce, finished for 5 minutes in the oven with grated parmesan on top.
