In a wintery cold weather, there is a special comfort in a dish of pork with sage. The aromatic warmth of the sage, carried by the butter, lifts the umami-ness of the pork.
I love that there is no recipe, just following one’s instinct: sear the piece of pork on all sides, season generously, deglaze with a dry white wine, and when you feel it is the right time, throw that vibrant bunch of sage, add some fresh butter, mix everything and slow cook…until it’s cooked through!
