My cooking class today included those roasted vegetables with salsa verde.
Delicious and easy and healthy.
Roast the vegetables halves in the oven first, then spread the salsa and grill for 5 minutes. My salsa today was a blend of basil (lots), flat parsley, mustard, capers and olive oil.
