Roasted in one single dish: chicken with avocado, spinach, brown rice and the crunchy pomegranate seeds.
This is a recipe by the talented Rukmini Iyer, and I particularly love the idea of roasting the chicken with the avocados, skin on – yes, you read well, the avocados ate cooked for 25 mn with thei skins on, and their taste and melting texture is fabulous.
Add a dressing of olive oil, lime juice and mint, and you have one simple and gorgeous family dish.
