Stuffed aubergine with crispy tofu and younger leaves.

Aubergines are superb greens, and though they’re one of many few which can’t be eaten uncooked in any respect, they’re fairly versatile. I wish to current them entire and stuffed, whether or not as a vegetarian dish like this one, or with a flavoured meat mince.
