And indeed. What an extraordinary meal, orchestrated by the Escoffier club.

Glazed tomatoes with crispy mushroom salad and goose liver hawthorn.
Slow-cooked lobster in saffron sauce with red plum jam and aged blood orange peel sorbet.

Wine pairing by VinEssentials, and only Chinese wines. The lobster was accompanied by Les sentiers de Xialing 2017, Xiaoling estate, Yunnan.

Intuitively, I had chosen a red shirt. Phew. Green would have been such a faux-pas.
