Walnut cake, matching perfectly the mood of the season – and matching perfectly your morning cup of coffee too.

Tips: use freshly dry-toasted walnuts, turn them into a coarse powder and use it to replace half of the flour in the dough. The flavour is intense and the texture amazingly light.
Tip 2: caramelise some whole walnuts for decoration (I admit I ended up eating the caramelised walnuts on their own… it’s healthy protein, though, after all).
Tip 3: if serving the cake for dessert, pair it with a coffee sauce: start with a light syrup of water and sugar, leave to caramelise a bit, add a shot of espresso, and a small glass of cream.
