Yesterday’s cooking class: fillets of cod glazed with honey and ginger.
As much as I love fresh ginger, I use an organic ginger powder for this recipe, which keeps the texture of the sauce perfectly smooth.
The sauce is a mixture of honey, soy sauce, ginger powder and a touch of corn starch. It is cooked briefly in a saucepan, then poured onto the sizzled fillets, and finished off for proper glazing in the oven.
